In general, IBIS simulation is easier and quicker while Spice simulation is
more complicated, time-consuming, and more accurate.
The choice depends on what you have to invest in time and effort versus the
accuracy that you need.

What is the preferred model and why? IBIS or Spice?
I know people who hate IBIS and people who like IBIS.
So far, I've yet to meet someone that hates Spice.
